Consider ricotta, Devon cream, or even yogurt that has been drained overnight.

Butter, I should think. There are a lot of recipes for "spritz" cookies that use a cookie press, but don't require cream cheese. Here are a few: http://www.foodily.com/s/press-cookies-no-(cream-cheese) . Have fun!! ;o)
