It depends on the size of your zucchini. If it's the typical supermarket standard, about 2 inches in diameter and roughly 8 inches long, then you probably need two. If it's a sneaky late summer neighbor donation of the killer variety lurking beneath the leaves- maybe 1/4 of that. Generally most recipes are not so critical of measurement that a bit extra or less will break the result, so if you have a last inch or so to shred and are at 2 cups, you can pretty safely add in the last bit shredded. If you have a large seedy monster though, be sure to gut the seeds and just shred the tender bit- and don't feel obligated to use the entire thing.
