Do I use all the Levain when making the dough?
Hi - it is unclear based on ingredients if I use all the Levain in the recipe the next day. Assuming so? Also - not clear in recipe if I should subtract the grams of flour, sugar and water I used to make the Levain from the overall ingredients when mixing dough. Can you please clarify?
