I imagine the reason is to give the meringue a chance to dry out so it will hold up the structure of the cake as it cools. If you do not fully dry out meringue for things like cookies, they collapse into gooey messes.

The cake will be a soak and not well cooked. I've tried to skip this step and the cake turned to be slushy and inedible. :)
