Can I sub a Dried bay leaf for the fresh?

Can I use a dried bay leaf? Or will that get weird? Better to leave it out or sub something else?

Yes, have used dried bay often in pickling with good results.
I would use a small whole or half dried large, as dried spices are stronger than fresh.
