Use sourdough discard for this recipe?

I was thinking I could use some unfed sourdough discard for this recipe. Any issues with this?

So I tried this without the yeast and while it didn't get quite as fluffy as the original recipe it was delicious, airy and soft

I don't see any reason why you couldn't. You wouldn't need to add additional yeast either. Since the recipe calls for an overnight repose, and a very small amount of yeast- your discard should work quite well. Making flat bread is one of the ways I use discard myself, and my sons have turned it into pizza a few times.
