Pesto keeps well in both the frig and the freezer. We tend to make big batches of different types, especially in the summer when we have a big variety of seasonal/local produce to choose from...like fresh mixed herbs, roasted red bell peppers or deep greens like chard.
If it's fresh...keep a small quantity in the frig and use it up within say a week, then if you want more, it's in the freezer in small containers and just needs to defrost in the frig overnight. We keep pesto frozen for months. Pesto makes a great gift too-not everyone likes it, but those who do love it fresh!
Not all pesto recipes call for lemon, but we have found that without lemon, the pesto that we keep in the frig or freezer tends to darken in color. Garlic and lemon give any pesto and nice tang too.
You also might have to revive the pesto a little after being frozen...just mix it with a little olive oil, adjust the salt/spice or add a little more freshly squeezed lemon juice...the stir and eat.
