If I don’t have a starter going (flour shortage) can I use instant yeast? How much? Also can this be used as a pizza base? Grazie!

I haven't tested, but this would probably work with around 0.2% instant yeast (for this recipe that would be just 1.0g). And yes, definitely would make a great pizza!
