Can I use a half sorghum flour half regular flour mix to make sourdough or sandwich loaves

This is not for a gluten free recipe I just want to use my sorghum flour.

You can, but your bread will lack some of the gluten it needs to rise properly. Sorghum flour lacks gluten, so instead of regular flour you might consider using half bread flour, which has more. You can also use it to make cakes and other baked goodies, in case you were wanting options.
