What size bunt cake pan do you recommend?

Greetings Coral - the egg yolks are cured, the salt is oven drying before storing, and I’ll finally be baking this wonderfully tempting cake. Can you please tell me the capacity in cups of your bundt pan? I’m afraid mine may not be large enough. It seems this cake may cure or age particularly well. I need to bake it the day before serving. Or do you recommend two days before? Many thanks, Nora Signer

Hi Nora! Congrats on making it this far (and am doubly impressed by your oven-drying the salt!).

My, and the test kitchen's, bundt pans hold 12 cups of batter. If you fear your pan isn't large enough, you can divide the batter in half, and bake in a 9x5 loaf pan (though watch for doneness a bit earlier).

I think baking the cake just one day in advance will be enough to age/set the insides, but if baking two days earlier fits better in your schedule, I say go for it! :-)
