Hi. The recipe says use a paddle attachment for the stand mixer. Should I use the dough hook attachment or stick with the paddle? Thanks!

Cecilia - an interesting question. I'm guessing you posed it because yeast doughs usually get mixed by the dough hook, but in this case not.
If you're making the rolls for the first time or for an occasion like Thanksgiving, I'd follow the recipe author and use the paddle, especially as you have it.
If you really want to try the dough hook method, I would make a experimental half batch or do that sometime you could live with less-than-perfect results.
