Turkey gravy tastes like butter

I made “make ahead turkey gravy” using turkey necks after watching the video by Josh Cohen. I used 6 tablespoons flour and 6 tablespoons butter and 4 cups of a the turkey stock. It tastes too buttery. Is there anything I can do to salvage it or do I need to start over.

Hello! You can slowly add more stock to it, then reduce it. It’ll be less buttery but potentially also less thick. You can thicken afterwards by making a slurry with a 1/2c of water : 1tsp flour ratio, whisking into the gravy, and bringing to a boil. (And give it a little time!)
