Can I substitute red onions for shallots in this recipe?

I excited to try this recipe and gift for the holidays. Since shallot are quite expensive at my local grocery store and red onions are currently on sale, could I substitute red onions for shells in this recipe? Would I have to make any adjustments? Thank you!

Hey Josh—red onion would be awesome! Just start with the same weight (2 pounds) and proceed as written from there.

Update: This recipe worked beautifully and was well-received by the recipient. He ate the entire jar within 24 hours! I will certainly make again when pounds off onions are on sale and I have a “sour chef” to peel and chop the onions. Lol.
My only substitutions, I used 2.5 lbs of red onions and used fig-balsamic vinegar but may use a sharper vinegar next time. Simple, straightforward recipe with room to experiment.
