Do you put in the oven cold or should you preheat?

To confirm - you are putting it in the oven cold and cooking for 1 hour when it gets to 325 or cooking for 1 hour including the time it takes to get to 325?

Also, do you need to let it set in fridge overnight?

I read it like this: put the cheesecake in a cold oven and *simultaneously* turn the oven to 325. In other words, do not pre-heat.

Bake for one hour. Turn the oven off, leaving cake in the oven for 3-4 hours without opening the oven door.

I’d let it set up in the fridge overnight, but take it out of the fridge about 30 minutes to an hour before you serve it.

Hi there. My Nonna had written all in caps to not preheat and then to not take it out of the oven for 3-4 hours. This is an old school recipe, so I suppose things are a bit odd.

I don't know that it ever lasted with our family to be refrigerated overnight, but it sounds smart to let it get up to room temp to serve.
