How much water for the coulis?

It says to heat the pears with sugar and water but it doesn’t say how much water

Yikes! That's a big miss, isn't it? Since a coulis is a reduced sauce, my inclination is to use as little water as possible. Maybe a small saucepan and 1/2 cup water (usually water and sugar quantities are equal). See how that looks; I'd want the pears to be pretty submerged, but since you cover to cook them, steam should also help.
