They still look great, but are falling apart. Any help with consistency?

Did anyone have a problem with these falling apart? I did everything correctly but they don't look smooth like the photo, very chunky. I think the dates are supposed to be more blended but not sure how to do that without breaking my food processor 😅 Any assistance?

It may be your mixture is on the slightly drier side of things, and the dates needed a bit of moisture to break down more. You could try adding a small amount back into the processor with a spoon of water to see if that doesn't help get the consistency you are looking for. If that works, then just process in small batches until you have it all done. Then mix it all together and try freezing again.
