I think you would have luck using 6 tablespoons of aquafaba - good old chickpea liquid - in place of those eggs. Since there are leavening agents used, and the oil will provide fat, I believe their primary purpose is to act as binders. One regular can of chickpeas should provide you with plenty of liquid. Or you could use one of the commercial egg replacers on the market, if you preferred. I would not opt for things like chia or flax seeds, though- or other sorts of egg replacements like applesauce, bananas, pumpkin or nut butter either. Aquafaba brings no taste change, which is one big advantage that it has. Plus, it comes free inside every can of chickpeas.
