I was hesitant to recommend doing that, because I know that many cakes really must be baked in a pan with a center hole, such as a tube pan or a Bundt pan. I took a quick look at some other questions that were asked about this particular recipe and learned that, yes, you could put this in 2 9" pans.

[A] tube pan works best because getting heat through the center helps the cake cook through evenly and quickly. However a 9 inch cake pan or springform pan will definitely work! And many people like to split the batter into 2 cake pans so they don't have to cut the cake into layers.
