How do I position the cake layers?

Help! I made this for the first time without any trouble. This time I made it at a different elevation—could that be why it didn’t rise properly? There’s a moat in the middle of the cake. Is it because I’m in the mountains? Any suggestions for next time?

Also— I can never quite figure out which way to position the layers! If the cake is turned out of the pan, upside down, then the bottom is the top. When I follow instructions as written it seems like it’d just be exactly the same orientation as before, but with frosting in the middle. Can you explain again how it’s supposed to be?

Hi Laura, sorry to hear about the moat issue! It definitely sounds like an elevation issue and I’m hoping someone more knowledgeable than me will weigh in about it. In the meantime, I can help with the orientation of the cake. When you remove the cake from the pan and it’s upside down, this is how you want the cake to be iced and served. The bottom of the cake has the cleanest edge and flat top so I like to use this side as the “top” of the cake. I hope this makes sense!
