If you mean lemon zest as opposed to pieces of lemon peel, when I have leftover fresh zest from a recipe, I simply spread it out loosely on a plate and leave out on the counter over night. If it isn't completely dry, I usually slip it into the microwave for a couple of 10 second bursts until it is dry. Then I store in an empty spice jar.
Or, cut strips if peel, put in dehydrator, then chop. Alternatively, try Gammy's roon-temp method or a very low oven. Once dry, chop. For all the dried peel or zest, store in covered glass jar.
