Can i prep the dough the night before?

Trying to make these without waking up quite so early! At what stage do you think it would be best to refrigerate overnight? I'd like to prep the dough the night before but cant figure out if i should roll them into the pan first?

Yes! I'd suggest making it up to the first rise, and doing the first rise (pre-shaping) in the fridge; this will also help develop the flavor!
