Polenta gone wrong. Anyone know why?

I cooked using 4:1 ratio and everything looked great.
When done, I turned off flame and added 1TB butter and approx. 4 tsp. Grated Pecorino Romano. Stirred a few times and all good. Left uncovered on stove for about 10 minutes and it turned to soup.
This is second time it has happened.
Any ides would be helpful?

I’m actually surprised it didn’t turn to cement. Mine does if I let it sit.

I always say that polenta waits for no one. It must be eaten as soon as it’s ready. I’m sorry I can’t be more help.

Thanks. I would have been ok with cement, at least I could have reheated it.
