Is it possible to use frozen puff pastry dough? I know that sounds “sacrilegious” but it would seriously make this recipe more accessible.

Sure, use Dufour puff pastry. It's pretty darn good, better even than house-made puff when cheap butter and flour are used.

Wow, I didnt know there was any brand other than the one whose initials are PF. Do you have any leads on what American stores carry it?

Nancy, Whole Foods carries it. It's pricey. Last time I checked it was close to $10 per box. But when you think of the ingredients and the time taken, it makes sense.

And Charlie is right, PF uses oil. Their puff pastry has no buttery mouth feel. It looks okay, but the taste just isn't there. Dufour is definitely worth the money if you're not of a mind to make your own.

Very interesting!!!! Once upon a time, a very long time ago in a week long pastry class that I took, I did make puff pastry. Its done beautifully here, but I might check it out at Whole Foods. The apple mixture and custard looks divine, but the Dufour sounds like a delicious and easier option. Ten dollars - that’s how much you pay for a cheap frozen apple pie, so sounds not too bad to me! Thank you!

Dufour won't disappoint. Realize, though, that Dufour is just puff pastry. It is not a finished dessert. You'll pick up with your recipe at the point you have your pastry (the Dufour) rolled out and ready for filling, etc.

I wouldn’t call it sacrilegious...I’d call it a hack :). Go for it...and let us know how it turns out.
