Rhubarb curd shortbread recipe—rhubarb curd specifically!

Can I freeze excess rhubarb curd? I am planning on making a 3x batch and I am not 100%sure I can use it all up in a week or so! Thanks!

Absolutely! I've done it in the past and have used it before I noticed any problems. I would say if you vacuum seal the excess it will last 4-6 months with no problem. It doesn't have to be blanched unlike other fruits or vegetables. I hope they turn out great!
