AP vs Bread Flour: Would there be a difference in texture if I used the Bread flour instead of AP flour? Thank you :)

Bread flour will make it firmer, because of the higher gluten content.

I find with AP my bread typically turns out more tender and a little softer. Bread flour is totally fine to use, of course, but it might have a chewier texture depending on how much you use.

Ok - I'll try with AP flour, as written. I've noticed that the hydration is rather low compared to your other recipes. Would there be less oven spring/holes?

There's a fair measure of oil in this dough so the water needed to be reduced!

Bread Flour has more protein than All Purpose Flour. The higher protein gives the bread a more stable rise, structure to the holes in the middle (aka, the crumb) and a better chew. However you can make bread with AP Flour and it may turn out quite delicious, but the texture will be somewhat different.
