Do you think you can make this with sweet potatoes?

SURE! My mom used to frequently make a skillet dinner with sausage, sweet potato and apple chunks. One of my fondest childhood dinner memories!

I see no reason why you couldn't, and can think of a lot of reasons why you and I ought to give it a try. It might take a bit longer to cook, because they are denser fleshed, but the finished product would be TASTY.
