Do you think it would be ok to just leave this out on the counter to proof overnight?, but

My loaf is really flat. I seem to always have poor results with a long proof in the fridge vs on the counter top.

Ok to let rise at room temp, but only about 2 hours. Much more and the dough may collapse.
