What is a good substitute for biryani masala?
Was wondering if there is something else in my pantry I could sub in for biryani masala? Thanks!

It has many of the same spices used already in the recipe, with no one spice dominating.
I would use: 1/4 tsp ground fennel, 1/2 tsp ground cumin, 1 tsp ground coriander, 1/4 teaspoon nutmeg, 1/8 tsp cloves, 1/2 tsp paprika, 1/4 tsp of ground cardamom and 1/4 tsp of cinnamon, along with an extra bay leaf added with the one that’s called for in the recipe.
If you feel like toasting and grinding any whole spices in the list above, by all means, do so. They'll make the biryani even better. It's a lot of work, however, so if I were in a hurry, I wouldn't bother.
