It’s in the oven, first 20 minutes!
When do I remove the cheesecake from the water bath? After cooling for 10 minutes in the oven and before letting it cool at room temperature?
That is:
- Turn off oven, crack door to vent out heat and leave cheesecake inside oven for 10 minutes
- Remove from oven and take cheesecake out of water bath
- Let the cheesecake cool at room temperature
- Unwrap the foil from around the pan
Is this correct?

After the full cooking time, you turn the heat off, crack the oven door and let it sit for 10 minutes.
Remove the cheesecake and let it sit on the counter for an hour. Remove the foil, etc. Then chill for at least 8 hours. That last step - chilling -- is very important, to set the cheesecake, giving it the best texture.

That’s exactly what I did — removed the cheesecake from the water bath after sitting in the turned-off oven for 10 minutes and before cooling it at room temperature for an hour.
The cheesecake is on the counter now, cooling at room temperature. It looks beautiful! I will put it in the fridge when the hour is up for proper chilling. I may have to have a midnight snack tonight!
