I made a batch this year with honey, no sugar at all and it is great! It’s really depends on your peaches, I’d make the butter and taste it, if it’s sweet enough then there you go!
Sugar in canning preserves the shape and color of the fruit, but it’s not needed for safety, so you could cut it back, especially for a butter recipe like this one. After you boil the fruit, taste it and add sugar and honey till you like the taste. Keep in mind that it will probably taste sweeter as it reduces and the sugars concentrate. I hope this helps.
