Can I use frozen berries? I have two pints of frozen blackberries. Should I thaw them first?

Hey thank you very much for the suggestions! I flash froze my berries on a cookie sheet so they’re very much individual. As I’ve promised to bring a buckle, I’m going to give it a go.

This biggest unknown in this scenario is how the blackberries were frozen.

If they are IQF (Individual Quick Frozen) like in a commercial product, then using frozen berries would be workable.

If they were home frozen into two big one-pint blocks, they can't be used in this dish frozen, they will need to be defrosted first. This will cause massive streaking and smearing in the pastry dough.

Note that excessive moisture (from berry juice in this case) in the pastry may cause problems in attaining a successful bake and pleasing crumb. This is not specific to this recipe, this is pertinent to all pastries with moist fillings.

On the other hand, if all you have are frozen berries and you want to make this recipe, yes it will work. But give you slightly different results than fresh berries.
I would use them directly ftom freezer.

Beware that using frozen berries will cause more bleeding through the pastry dough.

If you defrost them first when you mix them into the batter it will be a smeared mess. Your call if that's the kind of presentation you want.

I would opt for using still frozen berries if I felt compelled to make this dish without fresh berries. That said, my inclination would be to find a more suitable dish for frozen berries (like a pie).
