For the nuts - use raw or toasted?

For the pistachios, walnuts, and pine nuts, should I use raw nuts or toast them lightly?

Hi I'm the author, use them raw, no need to toast them (that step would have been in the recipe if it were the case). As a very general observation, in Italy (and especially for desserts), nuts aren't toasted!
