Well, the recipe says it's squidgy which means that it might not be as firm and solid in the center as other cakes, but then, someone else said that 40 minutes was too long.
When you took the cake out and let it sit for a few minutes, did it stop jiggling? That often happens . . . .
I let it bake longer, at least another 10 mins! Was a hit with GF friend and family. Still tastes like GF to me but happy to make my friend happy! Not-GF husband is eating leftovers right now. Loved the frosting.
