Yes, you could! It might give them even more chew.

As Antonia said, yes you can! I would mix the dough, let it ferment for 30m to 1 hr, then refrigerate.

Yes!! It will taste even better that way. I oil the top of the dough well before tightly covering the proofing container. ;o)
