Do you have suggestions for a dairy-free substitute for the caramel?

I have successfully used several alternate fat sources for butter in cakes, but not sure about the best fat to use for the caramel. Suggestions?

i just used vegan butter in a cashew brittle and it worked great, so I would not hesitate to use it here. I used Miyoko cultured butter substitute, which is made with nuts. It's my go-to where flavor is important in things I'm making that must be dairy free. The nuts also allow the butter to brown, unlike vegan butters not made with nuts. ;o)

Many vegan caramel sauce recipes out there. They use vegan milk and butter.
