Wouldlike to make these ahead of time. How long do the keep? Can I freeze them?

Refrigerated, they should last at least a month. I wouldn't bother to freeze them, but if you do (people say you can freeze truffles - I haven't tried it), freeze them separately on a cookie sheet first, and then drop them into a zipper-lock bag from which you can squeeze all of the air. I've read that truffles can be frozen for several months. ;o)
