Why is the Food52 chocolate roulade cake baked at a higher temperature?

Hi, I made the blueberry cream roulade last week and wanted to try this chocolate roulade and noticed that the instructions for the chocolate cake indicate a temperature of 425 while the blueberry cream roulade cake is baked at 400 F. I'm interested in understanding why that is. Thank you.

It’s a really interesting question. I’m curious, too, especially since the recipes are both written by the same person. (Maybe message her?) I would bake both at the lower temperature. You can always bake the chocolate one a little longer if need be, but you don’t want to over bake it, or it will lose its pliability and will crack when you roll it.

Thanks drbabs. Yes, I guess it would just be a matter of watching it closely. I made the blueberry cream roulade a second time with just as much success as the first time, the recipe works very well. I did, however, this time use my home made nectarine jam as part of the filling. It was yummy as well. Happy baking.
