Is there a way to make the dough the night before and leave it somewhere (in the fridge or on the counter) overnight and then bake the next morning?

Yes. In the head note, the author says, “ If you wanted to proof the dough overnight, you could slow down the fermentation in the refrigerator and then bake it in the morning.”
