The recipe says to roll out only a 1/4 of the dough? Is this because the recipe for the filling only is enough for this amount?ugh

It's not clear, but I think she does that so that you're working with the dough a little at a time and the rest stays moist. She says it makes 40 dumplings--you just fill them 10 at a time.
