Reread step 2 about processing the soaked dried fruit. It says to add more liquid if needed to get a desired pureed texture. Conversely, if you don't need all the alcohol-soaking mixture to get the needed texture, set it aside - for another use, or add some ice and soda to drink as cook's treat while you work.
