Irina - any hardwood will do. For example, a have some handmade utentsils in Maple, from New Brunswick - very strong, beautiful too. Here's a discussion of which woods are best and why. https://www.quora.com/What-type-of-wood-is-the-best-for-kitchen-utensils
I've owned olive wood utensils, but never beech. I currently have these teak utensils - Food52's own line - which are the nicest wooden spoons, etc., I've ever owned https://food52.com/shop/products/7343-five-two-wooden-spoons They are my go-to's, so nice for so many reasons, such as their weight, shape / design, how they feel in your hand when using them, etc.- highly recommended! ;o)
