Another idea - consider making a sort of crumb topping, using crumbled gluten free matzah boards (already baked) and nuts, so that their total volume equals the old oats, flour & nuts (about 3 cups). Would be tasty and crunchy.

Hi! I haven't tried these, but for Passover you could try almond flour or finely ground matzo meal! (Just to note, some people don't eat oats during passover! If that's the case, I'd up the matzo meal or almond flour to 2 cups total—you may have a bit less topping but I think it'll be ok! If you're just trying to make this gluten-free, don't use matzo meal, as that does have gluten; and ensure the oats are certified GF.) Hope this helps :)
