When should you divide the batter to make multiple colors?

The recipe adds the coloring to the meringue, but if you want to split the batter for multiple colors, when is the best time to do that? If you wait until the end to split and add the color, will it result in overmixing the batter?

It’s totally fine to add the coloring after diving the batter, just be sure to undermix it a little to compensate for the additional mixing it will take to incorporate it. Adding it into the meringue is really a preference - it makes it easier to incorporate it evenly because I’m still using the mixer rather than folding by hand, as with the final batter! Happy baking!
