When I have time and am able to get a large piece of fresh ginger, I peel it, blitz it in the food processor, and fill as many cubes as I can in a tiny lidded ice cube tray - https://www.amazon.com/Ice-Cube-Trays-Lid-Easy-Release/dp/B07NWGZS4W?th=1 They come in a set of two, so I use the pink one for ginger (fresh ginger is somewhat pink on the outside when just picked - we were able to buy it occasionally in the Old Oakland farmers' market when I lived nearby) and the blue one for garlic (also blitzed right after doing the ginger). It's so convenient to have those tiny cubes on hand! Their lilliputian size makes it easy to get just the right amount. ;o)
I keep fresh ginger in a ziplock bag in the freezer, and just microplane grate what I need when I need it. I don’t even peel it, unless I need chunks for some reason.
