malt and celiac. My wife has celiac, so i can't use malt since it has gluten in it, what can i sub it with?

I would just eliminate it and not worry about it :)

Look for a brewer supply near you, and check the malted sorghum syrup or powders they have. That's what is used to make gluten free beers. Or perhaps try some dark molasses.

Viking makes a gluten free malt extract, but it’s there for flavor so you could also just leave it out
