would the dough work if I use 1:1 gluten-free flour instead of regular flour?

Maybe this dough would work with gf flour.
But other (tested and reliable) recipes for GF pierogis have different dairy ingredients and different ratios of flour to dairy/liquid.
So if you like this filling, maybe use it with a deliberately planned GF dough recipe.
