How long does it last in fridge/freezer?

Hi, I always have lots of whey from making ricotta and yogurt - I would love to put this in mason jars and give as holiday gifts. Can anyone tell me how long it would last in fridge or freezer? It would be helpful to have some storing suggestions??? thanks in advance!
