Turkey Sausage instead of Italian sausage

Would turkey sausage be suitable for this recipe? If so can you roast it same as Italian sausage

Go for it! I often sub turkey for pork sausage when I am trying to limit my red meat consumption. Just make sure you have plenty of fennel seed and some red pepper flakes so that Italian flavor profile will shine!
