Regular Hershey's cocoa is NOT Dutched. You can use it but it might be a bit acidic. You can also Dutch it yourself with instructions from Spruce Eats: https://www.thespruceeats.com/dutch-processed-cocoa-powder-substitute-4140431 OR Hershey's Special Dark IS Dutched. Personally, I can't tell the difference between them as far as acid vs no acid.
