Can this be made ahead of time
Planning a party for 45 a tapas style menu. Can this be made ahead possibly the day before and reheated. I was going to serve in individual small bowls.

For the shrimp, follow the recipe as written, but don't add the shrimp to the skillet. Refrigerate separately, when ready to eat, first reheat the tomato mixture, then add the shrimp and simmer for 1 minute. Turn off the heat and cover with a lid to keep it warm.
As for the polenta, you can easily reheat it and add a splash of milk to thin it out. You might need more milk than you expect, it depends of the polenta you're using. Taste and adjust salt before serving.
